Re Mrs Sahar Ismail trading as Layali’s Cuisine

Mrs Ismail has been known to us since early 2020 when she commenced as a

volunteer for Unity International Catering (a partnership with other two other

local organisations, which we led) with purpose of providing meals within the

community to those in need on a daily basis during COVID. Alongside this she

completed a business course facilitated by our organisation.

Since 2022 Mrs Ismail has been our subcontracted cook providing meals for

lunch clubs Westbourne Rotary facilitate in the BCP area, on average 2 per

month. In addition, on same basis she prepared food for a number of outside

catering events on our behalf.

With our encouragement and support Mrs Ismail commenced her own

business and although still in a relatively fledging way has shown she has been

able to organised her own events not just providing the food but also the

preparation of venue etc. She continues to provide her services for private

catering events on request as part of her business as this is outlet we no longer

provide.

Mrs Ismail completed Level 2 Award n Food Safety for Catering and has

updated this. She has also been part of regular Food Hygiene Inspections that

have all ben rated 5.

To enable her to do all of above Mrs Ismail has full contracted use of our small

commercial kitchen based at a local church. (This kitchen is for the sole use of

our organisation and Mrs Ismail’s commercial contracts agreed by us and the

church). Mrs Ismail suitable Insurance to undertake this business.

During the time Mrs Ismail has been known to us she has demonstrated she is

able to assimilate cooking for a traditional English palate (older people in the

community). She understands about dietary preferences and allergies.

She has always shown she is of good honest character, able to direct a kitchen

utilising and training volunteers, complete recording in terms of safer food,

better business and ensures the kitchen area is always left in a clean and

suitable area after using it.

I hope this is of assistance to you. If you have any further questions then please
